#22 Try 30 new recipes (4/30)

I really need to get better at adding these recipes as I try them out. I have actually tried out more than four already but can't seem to remember to post them! This one, however....is memorable :P

My boyfriend had some friends over today and I decided to be the "good girlfriend" and whip them up some yummy treats to snack on. I made Italian Beef for sandwiches, an oldy-but-goodie, some fried spinach and cheese raviolis, (a twist on an old recipe), and these new DELICIOUS turtle cups. They were so easy to make and were a big hit with the guys!

Ingredients
8 oz soft caramels (not the caramel creams)
2 Tbsp cream
1 1/4 cups toasted pecans, chopped
1 cup semi-sweet chocolate chips
miniature foil candy cups

1. Distribute the chopped pecans evenly among the candy cups.

2. Place the unwrapped caramels and the cream in a medium bowl and microwave for one minute or until the caramel is smooth and homogenous. Tip: Try 1 minute first, then microwave in 10-20 second intervals to avoid burning the caramels

3. Spoon the caramel over the nuts in the candy cups, leaving room at the top for a layer of chocolate

4. Put chocolate chips in a bowl and microwave for one minute, or until melted smooth. Again, avoid burning the chocolate by microwaving in intervals of 10-20 seconds if additional time is needed.

5. Layer a small spoonful of chocolate on top of the caramel in each cup, spreading chocolate evenly.

5. Place the cups in the refrigerator to set the chocolate and caramel, for at least 30 minutes. I took them out of the refrigerator about an hour before serving to allow the caramel to soften a bit.
