Really yummy AND low calorie!

Orange Ginger Chicken

From: Betty Crocker The 300 Calorie Cookbook: 300 Tasty Meals for Eating Healthy Every Day

Ingredients

1.25 lbs Boneless Skinless Chicken Breast
1/3 cup Orange Marmalade
1/2 tsp Ground Ginger (dried) or 1 tsp Ground Ginger (fresh)
1 tsp Worcestershire Sauce

1. Spray skillet with cooking spray. Cook chicken on medium/high heat about 5 minutes until brown on bottom. Turn chicken over, add remaining ingredients and reduce heat to low.

2. Cover, and simmer 10-15 min stirring occasionally. When chicken is fully cooked, sliced into thin slices. Spoon sauce over chicken.

Makes 4 servings

I served it with 1/2 cup of brown rice and it was DELICIOUS!
