Here's another good recipe I'm going to add to my collection! Thanks to my good friend Steph for this one!
Cheesy Spinach Calzone bites
1/2 10oz package of frozen spinach, thawed & well drained
1/2 8 oz package of cream cheese, softened
2 tablespoons grated Parmesan cheese
1/4 teaspoon black pepper
1 13.8 oz package refrigerated pizza dough
1 egg white
1 tablespoon water
1 tablespoon grated Parmesan
1/2 8 oz package of cream cheese, softened
2 tablespoons grated Parmesan cheese
1/4 teaspoon black pepper

1 tablespoon water
1 tablespoon grated Parmesan
Bottled marinara sauce
Line baking pans (2) w/ foil; lightly coat w/ cooking spray. Preheat oven to 400.
In a medium bowl combine spinach, cream cheese, 2 tblsp Parmesan, & pepper Mix until well blended. Unroll pizza dough on a lightly floured surface; roll dough into a 15 inch square. Using a pizza cutter or sharp knife, cut dough into 25 3-inch squares. Spoon a slightly rounded teaspoon of filling onto the center of each square. In a small bowl use a fork to combine egg white and water. Brush edges of dough squares w/ mixture. Lift a corner of each square and stretch dough over filling to opposite corner, making a triangle. Press edges with the tines of a fork to seal. Place on baking sheets. Prick tops of calzones with fork. Brush tops of calzones w/ egg white mixture. Sprinkle w/ remaining Parmesan. Bake for 8 to 10 minutes or until golden brown. Cool slightly. Serve warm with marinara for dipping.
